Recipe: Ramen Eggs
The perfect ramen egg exists. As it turns out, ramen eggs are fairly easy to make, as long as you are prepared to wait for them. It only takes about 15 minutes to prepare and then it’s just a matter of waiting overnight for all the good flavors to soak into the eggs. I perfected the soft boiled egg at home so my eggs come with the most delicious jammy yolks.
Ingredients:
6 eggs
1/2 cup mirin
1/2 cup soy sauce
1 tbsp brown sugar
Method:
Mix mirin with soy sauce and brown sugar on the pan so the alcohol cooks out. Let mixture cool
Soft boil the eggs. It’s different for every stove so I tested a few eggs to get this right. For me- heat water in pot on high heat until boiling. Gently ladle in the eggs and turn the heat to medium. Wait 7 minutes and 30 seconds and then immediately move the eggs into an ice bath.
Peel the eggs gently, so as to not break them
Place eggs in soy sauce mixture
Let sit in refrigerator overnight
After you enjoy the eggs, it’s possible to use the mixture to cook something else! I cooked some chicken in it and it tasted delicious.
